Pam’s Kitchen: Mexican lasagna

Another week in Pam’s Kitchen brings another great recipe. This is a great family pleaser and easy to make. Takes a little time, but it is well worth it when you sink your teeth into it.

Mexican Lasagna

Prep Time: 20 min.

Cook Time: 40 min.

Servings: 6 to 8


-1 pkg of soft tortillas. Large ones

-1 large jar of salsa. Hot, medium,or mild, your choice.( I use hot)

-at least 2cups of grated old cheddar cheese or 2 cups of Mexican spiced cheese

-sour cream


Preheat oven to 350

Use a 9 by 00 in. baking dish

-cover the bottom of the dish with the sauce

-cover the sauce with the tortillas, you need to cut a few pieces to fit

-cover with sauce

-cover with cheese

-continue the same layering until you run out of tortillas

-cover with tinfoil and bake

-remove the tinfoil and bake until the top layer of cheese is melted.

-remove from oven and cool slightly.

-serve with sour cream on the side

If you prefer to have a meat dish, you can add 1lb. of cooked ground beef, dained and rinsed under hot water to remove the fat after frying it, them simmer the sauce with the meat for 15 min.
